New Year's Eve Grand Gala
WELCOME CICCHETTI Puff pastry parcel, speck and mushrooms Bresaola parcel and Russian salad Conchiglia with shrimp in pink sauce.
STARTERS Red tuna ingot in pistachio crust on purple potato cream with mullet bottarga puff pastry. Fassona and herb robiola roll on toasted chickpea fondue and pumpkin mustard. Sea fantasy: (oyster, scompone, prawn, lime-flavoured calamari julienne).
FIRST COURSES Black tortelloni with salmon and thyme with lobster sauce and scampi tartare. Risotto with porcini mushrooms and black truffle. - Lemon sorbet
MAIN COURSES Branzino braid with Salicornia and pumpkin puree. Beef fillet with figs. Accompanied by a fantasy of grilled vegetables.
PREDESSERT Green apple sorbet with Maldon salt
DESSERTS Toasted panettone with mascarpone cream and candied fruit White chocolate cheesecake with red fruits.
